Cimboco is an acronym for Cayman Islands Motor BOat COmpany and was the name of the first motorized boat that was the main connection between the Cayman Islands and the outside world between 1927 and 1947.
Today, Cimboco is a small restaurant with perhaps 15 tables that serves brilliantly tasty food throughout the day. I was starving after flying in from Vancouver via Toronto and so I truly welcomed the caribbean spinach and baby greens salad with its island fruits, shaved fennel, and citrus and cilantro vinaigrette. The tuna risotto was a pepper-crusted Yellow Tail tuna steak on a black bean risotto infused with coconut milk, which was filling, tasty, and beautifully presented.
The restaurant wasn’t serving alcohol as there’s a law disallowing the serving of alcohol on Good Friday, so I had two glasses of refreshing mango lemonade and a cappuccino coffee. The decor is colourful and funky with a distinct character of its own. The vanilla ice cream had a rich, creamy taste and appeared home made.
Cimboco is highly recommended and I will be heading back there for breakfast,
